Kati rolls:
We have these in almost all part of the world with different fillings from different places, in India we have veg and non veg done with some fresh onion rings and coriander leaves this is filling food on its own, and does not need anything other than something to drink along…
It is known as indian burrito, instead of tortilla or rice this is made out of wheat chapathi and pretty healthy where this food is concerned..
Chapathis are as usual with wheat flour add some dahi to make it soft and some salt, one can add some turmeric to give it a colorful effect and it his healing too, mix well and make chapathis..now for the fillings :
Paneer , capscicum:
Jeera powder 1 tsp
Red chillie powder 1 tsp
Salt
Onions shredded ½ cup
Coriander leaves a small bunch well chopped,
Shred the paneer u may need some 200 gms for two, and slice one capsicum really small so that it blends well with panneer, in a kadai, add little oil say 2 tsp or so and once it is hot add the onion and stir till it is trans parent and now add the panneer and capsicum and add over with jeera and chillie powder and mix well and stir and once the raw smell has left and getting a waft of cooked veg now garnish with coriander and close the gas..mix well and take a chapathi and u can add some raw onions too some lengthy spring onions also will be crunchy instead of ordinary onion, now add this veg inside and keep a paper napkin half way through that is one roll and then add the paper now tightly roll the roti, you will see the filling is to be seen on one side, if you are packing for lunch then pl keep a big sheet of paper wrap available in the market and roll the roti with that as the base and seal on both side with tucking in method…
Rajmah filling:
Boil rajmah, with some baking powder and strain, now add some oil in a kadai and put some jeera, sounf, add a cup of shredded onions and one tsp each of garlic and ginger paste, now mix well once the aroma starts wafting add the chillie powder and now add the rajmah and let it cook in a little water and let it dry completely to pack in the rolls,
Now u need to add some shredded cheese, spring onions and lemon juice, this is a wholesome protein required for all at least once a week..
Chana filling
Boil chana with some baking powder to soften and the same procedure as the rajma will go add some channe ka masala to give it an authentic Punjab flavour..
Mixed veg kati: one can have all the veg but the main ones are French beans, potato, carrot, even double beans can be added here, now make the veg with just simple jeera powder and chillie powder add some pav bhaji masala and u will get the flavor right now add some chopped coriander and bring it down, the garnishing should be done onely after u have switched off the gas otherwise it looses its color and nutrition,
Potato filling is favorite with all, u can use the potato kari that we make at home just u need to jazz up with some green fresh coriander and some onions to spice.
Cabbage also serves a good filling along with carrot and onion all shredded and then some salt and pepper with some lime juice can make a good salad filling.
Tomatoes and cucumber also go very well, with some spice like salt and pepper and some lemon juice all added to bring out the flavor.
We are god’s creation in the kitchen so when we can make something let us jazz it up with a lot more colorful stuff, I have done kati even with some fruits like banana, and some fresh cream or condensed milk and some nuts or dry fruits all mixed well and rolled out but this is not for packing lunch but to eat immediately once they reach home from school..
Non veg filling:
Though it is not advisable to give the children any non veg until rain comes, but still some do love them all time..
Shredded chicken, minced meat , and egg bhurji all these once done in the same fashion as veg just add some shredded cabbage it enhances the taste of non veg along with some mayonnaise and cheese shredded, that I have shown here, and it should be dry to roll in kati..

Yum yum yum , just the mention of the word Kati Roll makes my mouth water.


SUnkan... being a Kolkottian ( sounds funny to say that .... Calcuttian sounds so much better.... :) ) one of our favourite places to visit was Nizams just behind the New Market ..... they really had Delicious Kathi Rolls vegg , Non vegg, special with egg and chicken or mutton ......... god help me i DO miss them here in Surat
though when i was in Mumbai for a year or two i made do with the Frankies . BUT it was Nothing like the original Katis of Calcutta.
I do make them at home also ............... but not the same at all ..... mine comes out like the Chinese Spring Rolls.

delicious and best thing is you can eat the rolls while you travel......
best for those who always have a rush hour in the morning while getting ready for the office/school.....
take the rolls and munmch them while you leave for the school / office.....
