dear usha,
keerai masiyal,
is the usual greens thandu keerai, wash and chop them and do not cover and let it cook with a tsp of jeera and green chillies one and some salt, once it is cooked take a wooden ladle and crush them well untill it has lost its form, now garnish with some coconut oil in which dry chillie, jeera is added and mix well and serve...http://www.samai.in/recipes/wp-content/uploads/2008/05/spinach-masiyal-palak-curry-kulambu-kadanja-keerai-masiyal.jpg

next comes urulai roast, i cook them with the skin in an open kadai and poke a fork to find if cooked then peel it and cut into desirable pieces and in a kadai some oil, mustard and turmeric powder, hing, and red chillie powder 2 tsp or according to the amount of potatoe and salt and fry them till they are red and crisp. a little extra oil goes here, if you have oven just add all the ingredients and roast in a tray until crisp.

milagu rasam,
i make with a little ghee in kadai then some cummin seeds and pepper powder and then add some chopped tomato and some karuvepillai, and kothamalli, turmeric powder, hing, salt and mix well once it is a little cooked add diluted tamarind juice and make enough for the the amount of  requirement, and heat well and until tomato gets cooked, serve hot with rice soft enough to mix...
